Our Story

Asli Dhaba. Not Dabba.

On the long highways that cut across India, there are little roadside kitchens called dhabas — where truckers, travellers and families pull over for hot rotis, thick dal, spicy curries and endless cups of chai. That's the food we grew up on. That's the food we cook.

Hiway Dhaba started as a food truck with one simple idea: bring the honest, generous, spice-forward cooking of an Indian highway dhaba to the streets of Apex, North Carolina — without watering anything down. No shortcuts. No half-measures. Just the real thing.

Today, our truck still rolls, and our kitchen serves biryanis, dosas, chaats, tandoori and everything in between to guests who've become regulars, and regulars who've become friends.

    The spark

    A homesick craving for real dhaba food and a bright yellow truck we couldn't stop dreaming about.

  2. Chapter 2

    The first weekend

    We rolled out at a local market. Sold out by noon. Cried a little. Cooked more.

    The community

    Regulars showed up rain, shine and snow. Word travelled. So did the truck.

    The kitchen

    We opened a full kitchen so more of you could taste it, more often. The truck still rolls, too.
